Baking in Hawaii is so so so different from baking in Japan, well, in my kitchen in Japan anyway.In Japan, I don't have a "real" oven, my "oven" is the size of a dormitory microwave oven. With the last of the coconut milk, I made some muffins.I used my favorite muffin recipe (minus Earl Grey), and subbed coconut milk for regular milk.Since the coconut milk was sweetened, I also left out the sugar for the muffins.The recipe also called for a banana and lemon juice, but I left the lemon juice out.For a nice twist, I also added a handful of 60% chocolate chips. Two weeks ago, the weather was crappy...it rained for two days straight! It rained so much that there were a lot of landslides. Since I figured out how the oven on this thing works it’s been awesome. I never knew how to use it and I never actually looked at the controls on my microwave before or else I would’ve figured it out. Stupid. Anyway, used up the last of the cookie dough – that 1 batch made a lot.
